A2 Hosting still has not fixed the Database after their servers failed AGAIN. A2 Hosting is the WORST!
Because of this, new posts are currently missing and I can only HOPE they eventually recover the table they didn't restore after their latest failure.

Jam Updated... and More Recipes

Here are the updates for the Jam Jamboree.  (Recipes have also been updated and you can find full jam-making directions on this post.)

Unfortunately I didn't have hubby home for making these batches, and I think that probably won't happen again.  The jams got made, but it was a lot more fun and a lot easier with two people to tag-team the stirring and cleaning and chopping and... well... everything.

For the most part, the jams were a success, though I was not very impressed with the Stevia sweetener.  It left a little aftertaste that reminds me of diet soda.  Of course, some people like diet sodas, so they might be fine for some.  I was hoping they would work well for people with diabetes, and it seems they will be okay, but not for someone sensitive to the aftertaste of diet products.

The most interesting failure-turned-success was the Coconut Lime... it was supposed to be a full sugar marmalade that would be mostly sweet with a little tartness to it.  Yea........ No.

It was so sour from too much lime that I kept having to add more and more and more... and more sugar.  And finally I ran out of sugar... not only the sugar we bought for the jam making, but pretty much all the other sugar in the house, too.  Except enough for a couple days of coffee.

Strangely enough, it may not be very jam-like because it is very sweet when you first take a bite, then the sour creeps in and then... BAM!  A sour clydesdale kicks you in the face, knocks you back and tramples your tongue.  Not exactly something I would put on my morning toast.

How---ever...... I can picture it as a replacement for sweet-and-sour sauce that would put that red stuff to shame.  Sweet & Sour Coconut Lime Chicken, a glaze for ham, or even a dipping sauce for wings... or fried shrimp.  Ooooh-la-la!

So while it may only be a jam for the most ardent of sour-lovers, it will work for a lot of other uses, so I put the recipe here anyway.

Tested Jams on 8/27/14
Ingredients:   

Winter Jam  -  Strawberry and Pineapple

Family Recipe Adjusted for Ball Low Sugar Pectin by TinkerT

  • 1 c. Cold Water
  • 4 1/2 Tbsp Ball® RealFruit™ Low or No-Sugar Needed Pectin
  • 3 c. Rough Chopped, Crushed, or Blended Fresh or Frozen Strawberries
  • 1 1/2 c. Canned Crushed Pineapple (juice drained)
  • 1 Tbsp Lemon or Lime Juice
  • 1 Tbsp Butter
  • 5 c. Sugar

Extra Low Sugar  -OR-  No Sugar

Winter Jam  -  Strawberry and Pineapple

Family Recipe Adjusted for Ball Low Sugar Pectin and Low Sugar by TinkerT

  • 1 c. Cold Water
  • 4 1/2 Tbsp Ball® RealFruit™ Low or No-Sugar Needed Pectin
  • 3 c. Rough Chopped, Crushed, or Blended Fresh or Frozen Strawberries
  • 1 1/2 c. Canned Crushed Pineapple (juice drained)
  • 1 Tbsp Lemon or Lime Juice
  • 1 Tbsp Butter
  • 1/2 c. Sugar  -OR-  Or Stevia equivalent to 1 c. Sugar
Note:  Stevia has an aftertaste like diet sodas do.  If you do not like diet soda, you probably won't like the jam.

Extra Low Sugar  -OR-  No Sugar

Plum Delicious Preserves

Ball Standard Recipe 
(adjustment for tart plums included)

  • 1 c. Cold Water
  • 4 1/2 Tbsp Ball® RealFruit™ Low or No-Sugar Needed Pectin
  • 4 c. Fine-Chopped or Blended Plums
  • 1 Tbsp Lemon or Lime Juice
  • 1 Tbsp Butter
  • 1 c. Sugar  -OR-  Stevia Sweetener equivalent to 2 c. Sugar

Note:  Stevia has an aftertaste like diet sodas do.  If you do not like diet soda, you probably won't like the jam.

Cranberry Lime-alade

Recipe Made Up by TinkerT

  • 1 c. Cold Water
  • 5 Tbsp Ball® RealFruit™ Low or No-Sugar Needed Pectin
  • 4 c. Cranberry Juice
  • 2 Tbsp Lemon or Lime Juice
  • Zest of 4 Limes
  • 5 c. Sugar 
Note:  Even with 5 cups of sugar this is a tart jam.

Ingredients:   

Sweet & Sour Coconut Lime

Recipe Made Up by TinkerT

  • 1 c. Cold Water
  • 3 Tbsp Ball® RealFruit™ Low or No-Sugar Needed Pectin
  • 1 c. Puree Lime w/Juices (peal and squeeze before putting in blender to puree)
  • 1 c. Shredded Coconut
  • 1 c. Apple Juice
  • 1 Tbsp Butter
  • 5 c. Sugar
Note:  This makes a sweet and very sour that may be better for cooking or dipping than on toast.

Low Sugar

Mango Lime Marmalade

Recipe Made Up by TinkerT

  • 2 c. Cold Water
  • 4 1/2 Tbsp Ball® RealFruit™ Low or No-Sugar Needed Pectin
  • 4 c. Diced, Crushed, or Blended Mangos (Pealed and Pitted first)
  • Zest of 2 Limes
  • 4 Tbsp Lemon or Lime Juice
  • 1 Tbsp Butter
  • 2 c. Sugar (3 if tart mangos)

You are one brave lady to go it alone.  Even tried and proved jams are difficult but you made new ones, alone! WOW!
Sweet and sour does sound good for an Asian dish with chicken or pork.
Maybe also in a fresh salsa for added flavor.
