Because of this, new posts are currently missing and I can only HOPE they eventually recover the table they didn't restore after their latest failure.

How do I write a script for the following :

Cooling it to 115F

Dee,

While you could wait for the milk to cool in the pot, the heat that is retained in the sandwich bottom of the pot, and even more so in the heating disk, would take a really, really, seriously long time.  I tried to wait so I would not need to keep an eye on it cool, but I gave up after an hour and it still wasn't cool enough to add starter yet.  Depending on the water temp in your sink, you can cool in as fast as 10 minutes if you fill the sink to the level of the milk in your pot with cold water.

However, if you really want to try it, I would go with the following...

heat to temp 190
hold at temp 185 for 5 min
Pause to temp 115
Pause 1 min long beep (repeat, repeat, repeat, repeat to let you know to put in the starter)
Hold at temp 115 for 12 hours
